The most common problems people experience with bread machines relate to yeast and flour quality and accurate measurement of flour and liquid quantities.

Having good results is dependent on a consistent balance of ingredients. Cheese, for instance, melts into liquids while baking - so a recipe with cheese generally needs less water/liquid. Adding raisins to create a fruity loaf is great fun, but remember that raisins are concentrated sugar sources and the yeast will have more to feed on and the bread will rise more. So reduce the sugar and/or yeast content to compensate.

Problems : Bread sank or collapsed.
Cause : Too much liquid and/or yeast.
Solution : Measure liquids by using the accurate measuring cups. Reduce yeast if necessary.
   
Problems : Top of baked bread very knotted and uneven.
Cause : Not enough liquid.
Solution : Add extra liquid, a teaspoon at a time until a smooth pliable dough forms in the first knead. This situation will occur especially when additional ingredients are added.
   
Problems : Top of baked bread very puffed up or hit the bread machine lid.
Cause : Too much yeast added.
Solution : Reduce yeast. Level measuring spoon.
     
Cause : Too much water and/or sugar.
Solution : Reduce water by tablespoon or increase dry ingredients by ¼ cup in total. Reduce sugar by ½ tablespoon.
   
Problems : Bread did not rise or did not rise enough.
Cause : Yeast not added or did not activate.
Solution : Make sure you add the yeast and that the yeast is fresh.
   
Problems : Flour left on the corners of bread.
Cause : Dry ingredients not mixed in the kneading process.
Solution : Scrape down the sides of the bread pan with a rubber spatula during the kneading process.
   
Problems : Baked bread is soggy after removing it from the machine.
Cause : The hot loaf of bread was not removed from the pan soon after being baked.
Solution : Select BAKE and press START - allow to bake for about 5-10 minutes to eliminate sogginess. Press STOP and remove immediately.
